peppermint patties

dear reader,
today i have made my all time favorite candy cool breeze peppermint patties i love them!!!!! now this is just my personal opinion but they all most taste better with out the chocolate!!!
well any way here's the recipe

"cool breeze" peppermint patties
1 pkg (8 oz) cream cheese, softened
1 tsp peppermint extract
7-9 c confectioners'
sugar
1c semisweet or dark chocolate chips
3 tbsp shortening
2 tsp of shaved cooking wax(helps it not welt in your hands)

in a large mixing bowl beat the cream cheese and extract until smooth. Gradually add confectioners sugar, beating well. roll into a log about 1 inch in circumference

place on wax paper and cut into patties.

cover and refrigerate for 1 hour or until chilled. in a microwave melt the chocolate chips and shortening and the wax; stir until smooth. cool slightly.

dip patties into melted chocolate; place in waxed paper until firm. store in refrigerator. makes 48 pieces

so sorry everyone, brains been on Christmas mode and haven`t gotten around to blog. anyway, here`s a diet cake that i even like (and i believe in Paula deans cooking, the more butter the better) here`s the recipe
faiths fabulous diet cake
1 cake mix (any flavour any maker)
1 12 oz. can of diet soda(any flavour any maker)

says, then bake for about 3-5 stir the ingredients together until smooth, set the oven for what ever the package min. less than the package says.

and there you have it a really moist cake that has less that half of the calories of a normal one!

lemon chess pie

hi again everyone sorry i forgot to post last night in all honesty i didn`t cook any thing but i am making a ginger bread house thats pretty cool if i say so my self once im done i` ll try to up load it`s picture but any way here`s a recipe that i thought that y'all would like

lemon chess pie


3 eggs
1 C sugar
4 Tbsp butter, melted
1/4 C cream
4 Tbsp lemon juice
1 Tbsp grated lemon rind
1 unbaked 9” pie crust



Preheat oven to 350. Beat eggs and sugar together for 2 min. Add butter and cream; beat for 2 more min. Add lemon juice and rind, mix well. Pour into crust and bake 30-40 min, until top is medium brown and jiggling at the middle third of the pie. It will set up completely as it cools. Serves 6

when you make it be sure to melt the butter! i forgot one time and it tasted really weird
this dosen't have any thing to do with cooking but...

hello again

heres one of my moms favorites hope you like it!

“Jamaica Me Crazy” Muffins

(Pineapple-Coconut-Walnut Crumb Muffins)


Pre-heat to 375 Line or grease 12 muffin tin or 6 large muffin tin

Crumb Topping


1/3 C flour
1/3 C sweetened flaked coconut
3 Tbsp sugar
3 Tbsp chopped walnuts
3 Tbsp butter softened


In small bowl, mix: flour, coconut, sugar & walnuts. Work in butter with fingers or 2 forks till comes together and resembles crumbs. Set aside.

Muffin Batter


1 1/3 C flour
1/2 C sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 C coconut
2 large eggs
1/2 C canola or vegetable oil
3 Tbsp unsweetened pineapple juice (drained from can)
3/4 C unsweetened crushed pineapple
3/4 C chopped walnuts


In large bowl, mix: flour, sugar, baking powder, salt & coconut with whisk till blended. In medium bowl, whisk eggs till lightly beaten. Gradually whisk in oil. Stir in pineapple juice. Add egg mix to flour mix and stir just until combined. Fold in crushed pineapple and walnuts. Spoon batter into muffin pan, 2/3 full. Crumble topping over tops of batter.

Bake 20 - 22 min. for 12 muffins. Bake 30 min. for 6 muffins. Bake until toothpick inserted into center comes out clean. Let cool in pan on wire rack for 5 minutes. Remove from pan and cool in wire rack.

In the beginning...

hello everyone,
this is the very first blog i have ever made so that will explain if i do something wrong. i love to cook. the recipe that i have posted for you is easy chocolate truffles (i personally love them and i hope that you will too) so here's the recipe

easy chocolate truffles


8 oz. Cream Cheese, softened

3 C powdered sugar

12 oz. Semisweet chocolate, melted

1-1/2 tsp. Vanilla

Ground walnuts, unsweetened cocoa, coconut


Beat cream cheese in a large bowl with wire whisk or electric mixer until smooth. Gradually add sugar, beating until well blended. Add melted chocolate and vanilla; mix well. Refrigerate about 1 hour or until firm. Shape into 1” balls. Roll in walnuts, cocoa or coconut. Store in fridge.
